How To Make Buckwheat Pecan Pancakes
These are delicious pancakes that taste great with some butter and syrup or jam and are a quick solution for a quick easy camp breakfast!
What You'll Need
Mix in a zip lock bag:
2 Cups buckwheat flour
1/2 Teaspoon Salt
2/3 Cup wheat flour
2 Teaspoons baking powder
2/3 Cup dry instant milk
3 Tablespoons dried egg (optional)
In a small secure container:
2 Tablespoons oil
2 Tablespoons molasses
Add when mixing:
2 1/2 Cups water
1/2 Cup pecan halves
Pack for topping:
1/4 Cup butter (optional)
1 Cup maple syrup
This is a camping recipe, assume moderate heat on a campfire or pack stove
Step 1
When ready to cook, mix all ingredients except the butter and syrup and let set a couple minutes. If stiff, add a little more water
Step 2
If you heat the pan well first, no oil is necessary, however you will need a good, flat metal spatula
Step 3
Place spoonfuls into the pan, if you have time, pop 3 or 4 pecan halves on each cake instead of mixing them in, turn when lightly browned and cook on the other side.
Step 4
- Serve hot with butter and syrup.
- Can be saved for later in the day
- Also great served with jam
